This super Easy Feta Cheese Stuffed Bread is packed with Mediterranean flavors. A dash of fresh chopped herbs in the filling adds a nice taste to this golden-crusted savory treat. Quick and easy to make, too. It is the jumbo version of a Turkish pogaca pastry - little pockets of dough stuffed with feta and cheese - that I created one day.

Ingredients
  • Filling:
  • About 2 cups (10 ounces) crumbled feta cheese
  • About 2 tablespoons chopped mixed fresh herbs (parsley and dill, or just parsley)
  • Dough:
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2¼ teaspoons baking powder
  • 2 eggs (reserve one of the eggs yolks for glaze)
  • 1 cup plain yogurt
  • ¾ cup olive oil
  • Top:
  • 1 reserved egg yolk
  • Nigella seeds
Instructions
  1. Prepare the filling: In a medium mixing bowl, combine the cheese and fresh herbs. Set aside
  2. Prepare the dough: In a large mixing bowl, combine 2 cups of the flour, salt, and baking powder. Add the eggs, yogurt, and olive oil. Stir to combine and add the remaining flour. Stir with your hand until a rough ball forms.
  3. Scrape the dough onto your work surface and knead until the dough is smooth and elastic and not tight. It should not stick to your hands.
  4. Preheat the oven to 350ºF.
  5. Line a large baking sheet with parchment paper.
  6. Lightly flour your work surface.
  7. Divide the dough into 2 equal pieces and shape each piece into a ball.
  8. Using a rolling pin, roll out one ball into a circle, 9-inch wide.Transfer the circle to the baking sheet.
  9. Spread the filling over the circle, leaving a ½-inch border around the edge.
  10. Roll out the second ball in the same manner and place on top of the cheese filling.
  11. Pinch the edges of the two circles together to secure the filling inside.
  12. Brush the top with the egg yolk and sprinkle with Nigella seeds.
  13. Bake on the middle rack of the oven for 25 minutes, or until golden on top.
